Produced under an exclusive contract
Green glossy leaves carrying mint, citrus, clove and anise at once, fragrant with a light astringency underneath. It is the loudest leaf we grow, so a little goes a long way.
On the plate: raw fish, tartare, summer rolls and iced drinks. Treat it as a herb rather than a garnish and tear it rather than chop it.
